Rolled oats cookies
Ingredients:
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional)
- 1/2 cup dried fruit (raisins, cranberries, etc.)
- 1/2 cup chocolate chips (optional)
Instructions:
Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper or a silicone baking mat.
Mix Dry Ingredients:
In a medium bowl, whisk together the rolled oats, flour, baking soda, and salt.
Cream Butter and Sugars:
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy.
Add Egg and Vanilla:
- Beat in the egg and vanilla extract until well combined
Combine Wet and Dry Ingredients:
- Gradually add the dry ingredient mixture to the wet mixture, mixing until just combined.
Add Mix-ins:
Fold in the nuts, dried fruit, and chocolate chips if using.
Scoop Dough:
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake:
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underdone, but they will firm up as they cool.
